I have been making this for years instead of calorie laden fruit salad. This is sweet, crunchy, fruity and a perfect accompaniment to a heavier turkey, or ham dinner. Using both red and green apples make it perfect for the holidays.
Ingredients:
3 to 4 large apples, Granny Smith and a crisp red apple for contrast of color
1/2 teaspoon lemon juice
1 cup thinly sliced celery
1/2 cup raisins
1/4 cup craisins optional
1/2 cup coarsely chopped walnuts
Dressing:
1 1/2 cup pineapple juice
2 tablespoons cornstarch
2 to 4 tablespoons sugar
Make dressing first by combining all dressing ingredients in a saucepan, bring to a boil, stirring until thickened.
Cover and chill for one hour.
Wash, core, and slice apples, but do not peel.
Put apples in a large bowl, and toss with the lemon juice.
Add the rest of ingredients as well as dressing and toss to combine.
Cover and chill until serving time.
