Vegetarian tortillas

For vegetarian tortillas, you will need:

2 plain flour tortillas

2 tbsp olive oil

1 large orange bell pepper, sliced

1 tbsp tortilla seasoning mix

1 small red onion, sliced

soured cream, salsa and guacamole

(serves 1)

Heat the oil in a frying pan over medium to high heat for about 1 minute. Add the sliced pepper and onion and fry for 2 minutes, stirring from time to time. Add the seasoning mix and stir well. Cover and allow to cook on medium heat for 10 minutes. Fill tortillas with the pepper and onion. Serve with soured cream, salsa and guacamole.
