For the dough for this thin and crispy cheese and tomato pizza, you will need:
225g strong white plain bread flour
1 tsp sea salt
1 tsp dried yeast
1 tbsp olive oil
1/2 tsp sugar
150ml warm water
And for the topping –
250ml ready made pizza sauce (alternatively blend together 50ml tomato puree, 200ml tomato juice, a handful of basil leaves, 1 clove of garlic, 1 tbsp olive oil and pinch of salt and pepper)
120g mozzarella, thinly sliced
(makes one 14-inch pizza)
In a large bowl mix together the flour, salt and yeast. Make a well in the middle and gradually work in the water and olive oil to make a soft dough that comes away clean from the bowl. Knead the dough for about 5 minutes on a floured surface. Coat the dough ball in olive oil and allow to rise in a warm place for 1 1/2 hours in a losely covered large bowl. When risen, place on a lightly floured surface and roll out with a rolling pin to a 14-inch circle.
Spoon the pizza sauce over the base and arrange the sliced mozzarella on top. Bake in a preheated oven (220 °C / 425 °F) for 20 minutes. Serve.
