For pasta with salami and peppers, you will need:
400g penne or other pasta, slightly undercooked
200g salami, chopped or cut into strips
1 yellow pepper and 1 orange pepper, seeds removed and cut into strips
150g young spinach leaves
1 tbsp chopped parsley
1 tbsp chopped basil
1/2 onion, finely chopped
2 cloves of garlic, thinly sliced
150ml olive oil
1/2 cup grated parmesan
salt and pepper
(serves 4)
In a large frying pan, fry the onion and garlic in the olive oil over medium heat for 3 minutes. Add salami and pepper and cook for 2 minutes. Toss in the pre-cooked penne and herbs and spinach and cook for 1 minute. Add salt, pepper and parmesan to taste and serve.
