For mushroom salad, you will need:
1 large portobello mushroom
1 large ripe tomato
2 tbsp extra virgin olive oil
1 small clove garlic, finely chopped
4 basil leaves, finely chopped
1/2 small red onion, finely chopped
4 large olives
(Serves 1)
Heat the olive oil and chopped garlic in a small pan until just bubbling. Do not burn the garlic.
Slice the mushroom into 1/2cm pieces. Throw this into the olive oil and garlic, stir well and warm through.
Cut the tomato into bite-size chunks and place in a serving bowl. Add the olives, raw onion and mushroom from the pan and sprinkle the chopped basil on top. Mix well and serve.
