For low carb muffins, you will need:
4 eggs, beaten
8 tbsp oat bran
250g fat free quark
3 tbsp Splenda sweetener
2 tsp vanilla essence
1 tsp baking powder
butter flavored cooking spray
Preheat a fan assisted oven to 180 degrees Celsius.
In a large bowl or food processor, mixed together all the ingredients except the cooking spray. Spray the cooking spray onto the bottom of a shallow non-stick muffin/cupcake pan. Spoon the mixture into the pan, making 12 muffins. Bake in the preheated oven for 20 minutes. Remove from oven and allow to cool for 5 minutes, then transfer individually onto a cooling rack to cool completely.
