For grilled pineapple, you will need:
1 fresh pineapple, cut lengthwise into four quarters
1 cup apricot preserve, jam or jelly
2 tbsp palm sugar
1 tbsp coconut oil
1/2 tbsp ground cinnamon
Pinch of salt
Ice cream for serving
Preheat grill to 350F/180C
Put all the ingredients except the pineapple into a small saucepan and heat on low heat, stirring frequently, until everything is liquefied. Brush the warm mixture over the pineapple. Grill for 4 minutes each side (until slightly brown but not burnt). Remove from grill. Cut off the skin carefully with a sharp knife, and cut each quarter into slices. Drizzle the remaining apricot and sugar mixture all over and serve with ice cream.
