Ingredients:
900g Boneless Chicken breast/thigh
240g Breadcrumbs
20g Basil Leaves
1 egg
2tsp sea Salt
1tsp black Pepper
Oil for frying
Method:
1. Heat the oil to 170˚C;
2. Cut chicken into thick strips;
3. Blend basil, sea salt and black pepper with the breadcrumbs in food processor;
4. Beat the egg;
5. Dip chicken into the egg and then coat with breadcrumbs;
6. Deep fry the chicken strips for 4 minutes;
7. Drain oil on kitchen paper;
8. Serve with vegetable salad and mayonnaise.
