For rich and velvety chocolate mousse, you will need:

200g dark chocolate (at least 60% cocoa solids), chopped
7 egg yolks, beaten
7 egg whites
1 1/4 cups whipping cream
2 tbsp sugar
1 pinch salt

(serves 6)

Melt chocolate in a metal bowl over a pan of simmering (but not boiling) water. Gently stirring until nearly melted. Remove and keep stirring until smooth.

In a seond bowl, whisk the cream until soft peaks form.

In a third bowl, whisk the egg whites and salt until soft peaks form. add the sugar little by little, whisking thoroughly in between additions. Fold in the egg yolks, followed by the chocolate and then the whipped cream until evenly blended, with no streak remaining. Spoon into dessert cups, and chill for an hour or until set.
