For chicken casserole, you will need:
1 medium chicken, cut into 8 pieces
1 onion, peeled and cut into quarters
2 cloves of garlic, thinly sliced
225g chorizo sausages, thinly sliced
1 stick of celery, cut into large chunks
3 tbsp chopped fresh parsley
1 sprig of rosemary
1 orange pepper, seeds removed and cut into large chunks
1 yellow pepper, seeds removed and cut into large chunks
3 tbsp olive oil
2 chicken stock cubes
water
salt and pepper
(serves 4)
Heat the oil in a large pan and brown the chicken pieces. Sprinkle a little salt and pepper on top. Remove chicken and set aside. Fry the onion, celery, garlic, peppers and sausage for 5 minutes. Return chicken to the pan. Add rosemary, stock cubes and enough water to cover the chicken. Bring to boil, cover and simmer for 50 minutes on medium heat. Thicken with a little corn flour mixed in cold water if necessary. Stir in the chopped parsley and serve.
