For Cantonese vermicelli, you will need:
900g cooked rice vermicelli noodles
2 duck breasts, grilled and shredded
4 spring onions, sliced
4 tbso light soya sauce
1 tbsp dark soya sauce
1/2 tsp sugar
1/2 tsp sesame oil
2 cups cooked beansprouts
1 cup chopped cooked vegetables such as sugar snaps, broccoli, asparagus or mange tout
2 tbsp oil
salt and pepper
In a large wok, add the oil, soya sauces, sesame oil and sugar and fry on medium heat until beginning to caramelize. Toss in all the cooked ingredients. Stir well and fry until warmed through, adding splashes of water to avoid burning. Add salt and pepper to taste. Serve with the chopped spring onions sprinkled on top.
