Mr Rabbit’s Best Carrot Cake is such a fun cake to make and simple too. Be sure your bunny cake mold is a side view mold. If you have a full view mold just double the amount of pink icing and use 2 chocolate covered peanuts for the eyes.
For Mr Rabbit’s Best Carrot Cake, you will need:
3 eggs
1 1/4 C sugar
1/2 C vegetable oil
1/3 C water
1 t vanilla extract
2 C of flour
2 t baking powder
3/4 t salt
1 t cinnamon
1/2 t nutmeg
1/4 t cloves
2 C carrots, grated
1 (16 oz.) can cream cheese frosting
Pink gel food coloring
Brown decorator icing
1 chocolate covered peanut
1/2 t water
Red food coloring
Green food coloring
1 C flaked coconut
Allow the oven to preheat to 350 degrees while preparing the cake batter.
Break the eggs and place into a large mixing bowl.
Add the sugar, oil, water and vanilla and mix well to combine.
Place the flour, baking powder and salt into a separate bowl.
Add in the cinnamon, nutmeg and cloves and toss to combine the ingredients together well.
Beat the flour mixture into the egg mixture until well combined.
Fold in the grated carrots.
Grease and lightly flour a bunny shaped cake pan.
Bake the cake 27 minutes or until a toothpick inserted in the center comes out clean.
Cool for 15 minutes in the pan then move to a wire rack to continue cooling.
Use the pink gel food coloring to tint 1/3 C of the frosting light pink and 1/3 C of frosting dark pink.
Spread the remaining plain frosting over the entire cake.
Outline the bunny and form an ear eyebrow, bow, nose and mouth with the brown decorator icing.
Fill in the ear and nose with the light pink frosting.
Fill in the bow with the dark pink frosting.
Add the chocolate peanut for the eye.
Place the water into a sealable bag.
Add a couple of drops of the red food coloring.
Add to the bag 1/3 C of the coconut and seal the bag.
Shake and color the coconut completely.
Sprinkle the colored coconut to resemble the bunny’s tail.
Tint the remaining coconut with the green food coloring and place around the outside of the bunny to resemble grass.
