For this traditional bread pudding, you will need
6 to 8 slices of bread, torn into large chunks
3 eggs, beaten
750ml milk
1 litre warm water
1 tbsp vanilla essence
2 tsp ground cinnamon
1 tsp salt
250g butter
55g brown sugar
55g white sugar
1/2 cup tutti frutti
Soak bread in water. Remove from water, squeeze out excess and discard the water. Mix everything except the bread together and then add the bread. Mix gently, taking care not to break up the bread too much. Place in a greased oven proof dish and bake in a preheated oven at 180°C (350°F) for one hour.
Serve hot or cold, with ice-cream or thick whipped cream.
