Chicken pad thai

Ingredients:

200g thai rice noodles
1 chicken breast, chopped
1 tbsp chopped fresh coriander
1 tbsp lime juice
1 tsp chopped fresh red chilis
1 tsp sugar
2 tbsp groundnut oil
3 tbsp water
salt and pepper

Warm the oil in a large pan, add the lime juice, chilis, sugar and chicken and fry over medium heat for about 5 minutes, or until the chicken is cooked through, stirring frequently.

Add the chicken, water, salt and pepper and stir-fry for another 3 minutes. Sprinkle the chopped coriander on top and serve.
