Orange marmalade cake roll

For orange marmalade cake roll, you will need:

3 eggs
1 C of sugar
1/3 C of water
1 t vanilla
3/4 C of flour
1 t baking powder
1/4 t salt
2/3 C of orange marmalade
Confectioners’ sugar

Allow the oven temperature to rise to 350 degrees.
Line a 15 1/2X10 1/2X1 in pan with waxed paper being sure to cut off any extra.
Spray the wax paper well with a non stick cooking spray.
Beat the eggs in a small bowl for 5 minutes or until they become thick and lemon colored.
Transfer the egg mixture to a larger bowl and gradually beat in the sugar.
Set the mixer to low speed and blend in the water and vanilla.In another bowl toss together the flour, baking powder and salt.Gradually add the flour mixture to the egg mixture while beating the mixture on low speed.
Beat the mixture until smooth.
Transfer the batter to the prepared pan.
Bake 13 minutes or until a toothpick inserted in the center comes out clean.
Allow the cake to cool 5 minutes in the pan.
Sprinkle a towel with some confectioners’ sugar.
Invert the cake onto the prepared towel.
Slowly peel back the wax paper.
While the cake is hot roll it up in the towel beginning with the short end of the cake.
Place the towel rolled cake on a wire rack to cool completely.When the cake has cooled unroll it from the towel.
Spread the orange marmalade to within 1/4 inch of the cake edges.
Reroll the cake and dust again with more confectioners’ sugar.
Cover and refrigerate 1 hour.

Makes 10 servings

This is a little different side to the old fashion jelly roll. Any type of jelly or jam will work in this recipe.
