For this banana cake, you will need:
2 overripe bananas, mashed with a fork
200g soft butter
1 egg
110g caster sugar
140g flour
1 tsp baking powder
1 tsp vanilla essence
1/4 tsp salt
(makes 12 cupcakes – this recipe can also be used to make loaf or round cakes)
Mix everything together with a hand whisk, and spoon the mixture into cupcake liners and bake in a preheated oven at 180°C (350°F) for 25 minutes.
