For rice pudding, you will need:
900ml full fat (4%) milk
600ml single cream
125g sugar
150g pudding rice
6 tbsp strawberry or other fruit preserve
caster sugar and cinnamon powder for dusting
(serves 6)
Heat the milk, cream and sugar in a pan until nearly boiling, stirring frequently. Put the pudding rice at the bottom of a 1.7 litre oven dish. Pour the milk mixture over the top and mix well. Cook in a preheated oven at 170°C (335°F) for 1hr 45min until the rice is cooked, stirring halfway through the cooking time. Roughly stir in the preserve, sprinkle cinnamon and caster sugar over the top and brown until a hot grill. Serve.
