For white gazpacho, or ajo blanco, you will need:
•50g peeled unsalted untoasted Almonds
•1 garlic clove
•1/2 cup of olice oil
•1/4 cup white wine vinegar
•1/2 Baguette
•salt
•2-3 cups cold water
•white grapes (for garnish)
And yet another cold soup, this time pretty heavy on calories because of the large amount of almonds. Nevertheless a very tasty refreshing summer dish from the South of Spain.
•Put all the ingredients except the grapes into blender
•Process until liquid
•Add salt to taste
•garnish with white grapes
•serve ice cold
