Step 1: For patatas bravas (fried potatoes), you will need:
• 3 potatoes
• 300 ml olive oil
• for the sauce:
• ½ onion , finely chopped
• 2 cloves of garlic , roughly chopped
• 3 small chillies
• 240 ml white wine
• 2 tbsp sugar
• ½ tsp cumin
• 1 tsp paprika
• 500 g tomatoes , peeled
• 2 tbsp mayonnaise
• salt and pepper
Step 2: Cook the potatoes
Put a pan over a high heat. Add the potatoes, cover them with water and bring them to a simmer. Cook the potatoes until they are just done. This will take about 20 minutes. Remove them from the water and put them on a tray to cool down.
Step 3: Make the sauce
Into the second saucepan add a little oil. Follow with the onions, garlic and the chillies. Stir them in well and cook for a few minutes. Add the wine, tomatoes, sugar, cumin, paprika and season with salt and pepper. Stir briefly and cook for about 15-20 minutes more, until the liquid has reduced by half. Remove it from the heat and let it cool slightly.
Step 4: Peel and cut the potatoes
Slice a little from the bottom of one potato. Peel away the skin with your knife, half the potato and slice it into cubes. Repeat the same thing with the remaining two.
Step 5: Process the sauce
Pour the sauce into a blender and pulse a few times, then blend to until smooth on high speed. Next add mayonnaise (optional) and blend until thoroughly combined. Pour the sauce into a bowl, cover with some cling film and place into the fridge to chill.
Step 6: Fry the potatoes
Heat the remaining oil in a pan. Add a small batch of the potatoes into the hot oil. Occasionally, turn them around with your slotted spoon so they brown evenly. Fry them until golden brown and crispy, remove them from the pan and place onto a tray lined with kitchen towel to drain. Add another batch of potatoes and fry. Repeat until all the potatoes are fried. Finally, season them with a little salt.
Step 7: Serve
Place the potatoes onto a serving plate. Drizzle over some of the spicy sauce on top, being careful not to drown them! Your patatas bravas are ready to serve as a snack, or as an alternative spicy side dish! Any excess sauce can be kept in the fridge for several days to be used again.
