For broccoli bhaji, you will need:
600g small broccoli florets
1/2 small onion, finely chopped
80g butter
1 tsp medium curry powder
1/2 tsp salt
1/2 cup water
(serves 4 as a side dish)
Melt the butter over medium heat in a frying pan. Fry the onion for about 3 minutes. Add the curry powder, broccoli and salt. Stir well and fry for 2 minutes. Add the water, cover and simmer on medium-low heat for about 10 minutes until the broccoli is tender. Stir well and serve.
