For skate, you will need:
4 really fresh skate wings, rinsed and dried
3 1/2 oz or 100g butter
salt
handful of finely chopped fresh parsley
(serves 4)
Melt the butter in a large flat-bottomed lidded frying pan. Add the fish, cover and cook for 10 minutes over medium heat. Remove lid and continue cooking for 3 minutes, or until cooked through. Transfer the fish to serving plates. Add the parsley to the butter remaining in the pan, stir and heat gently. Pour the parsley butter over the fish, add salt to taste and serve.
