For roast belly pork, you will need:
1 belly pork joint with skin
1 clove of garlic, cut into 4 slivers
salt and pepper
Preheat oven to 220°C/425°F/gas 7.
Using a sharp knife, score the skin of the pork about a centimetre apart through into the fat. Rub salt right into all the scores. Season the underside of the meat with a little more salt and a little black pepper. Stab the underside of the pork with a pointed knife and insert the slivers of garlic. Roast the pork, skin side-up, in the preheated oven for about half an hour until the skin of the pork has started to puff up. Turn the heat down to 180°C/350°F/gas 4 and roast for another one and a half hours.Remove from oven, allow to rest for about 15 minutes, then carve and serve immediately.
