Roast duck

For roast duck, you will need:

4 large boneless duck breast (keep the skin)

salt and pepper

(serves 4)

Arrange the duck breasts with the skin side facing down on the bottom of an oven tray. Roast in a preheated oven at 180°C (350°F) for 20 minutes. Turn over the duck breast. Sprinkle salt and pepper over the top/skin side. Roast for a further 35 minutes. Allow to cool for 10 minutes before carving with a sharp knife into thin slices. Serve with vegetables, gravy and roast potatoes .
