For this ambrosia fruit salad, you will need:
1 cup tinned mandarin oranges
1 cup tinned pineapple chunks
1 cup miniature marshmallows
1 cup young coconut flesh
1 cup sour cream
Extra fruit for decoration (optional)
(serves 4)
Mix all ingredients in a large bowl and refrigerate overnight before serving. Decorate as required with extra fruit on top.
